Crunchy Granola French Toast

2 eggs
125ml (½ cup) milk
4 slices bread, sliced thick
125g (1 cup) Eastern Granola
1 tablespoon butter
Maple syrup, for serving

In a wide shallow dish, beat together the eggs and milk to form a thin custard. Melt 1 tablespoon butter in a pan over medium heat. Soak the bread in the custard for 30 seconds on each side, until it’s soaked through. Spread the granola on a plate. Dredge the toast in granola. Place on hot pan. Cook 3 minutes on each side. Serve with maple syrup. Serves 2.
