Eastern Granola Cookies


125g (1 cup) plain flour
1/2 teaspoon baking soda
1/2 teaspoon salt
125g (1/2 cup) unsalted butter, softened
100g (1/2 cup) sugar
1 egg
220g (1 ¾ cup) Eastern Granola

Preheat oven to 190C. Whisk together flour, baking soda, and salt in a small bowl. Beat together butter and sugar in a medium bowl with an electric mixer until fluffy, then beat in the egg. Add flour mixture and mix until just combined. Stir in granola. Drop 2 tablespoon mounds of batter onto 2 ungreased large baking sheets, spaced well apart. Bake cookies about 13 minutes. Makes 18-20 cookies.
